Here is a simple dessert coming straight from Spain : the Natillas!

- Boil the milk with the cinnamon stick and the lemon peel. Let infuse.
- In a bowl, mix the egg yolks with the sugar, until it gets creamy and white. Add the corn starch and mix well.
- Once the milk has boiled, take the cinnamon stick and the lemon peel out. Gradually add it to the previous mix, and put it back on the heat. Thicken this on medium heat, stirring constantly.
- When the cream gets thick enough (it will get thicker when cooling down), pour it in the serving ramekins. Put in the fridge for at least 3 hours.
- After this resting time, sprinkle each cream with cinnamon and put a biscuit on it.
- There you are, your Natillasare ready!
