Knead together the flour, the salt, the sugar, the crumbled yeast, the milk, the water and the melted butter. Knead until smooth.
Leave in a hot spot for 1 to 2 hours. Then, degas the dough, which means to apply some pressure on it to let the air go out.
Cut pieces of 3.5 ounces each.
Roll each piece into a rope, without putting flour on the work area.
Twist the edges twice, and stick them at the bottom of the pretzel.
Boil the water with salt and baking soda, then dip the pretzels one at a time, leaving them 30 seconds maximum.
Directly put them on a baking tray, and brush them with a beaten egg. Sprinkle with salt and poppy seeds.
Bake 15 minutes at 390°F. (200°C)
