Financier are French almond cakes. It means trader, because the French chef who created it was situated near a stock market, and so traders came every day to have a little treat. That's why they look like a gold bullion.

  • Almond financiers - Preparation step 1Prepare the "hazelnut butter" : Melt the butter in a pan and let it golden.
  • Almond financiers - Preparation step 2Remove from heat when it smells like hazelnut and has golden. Strain and leave to cool down to 104°F (40°C, room temperature).
  • Almond financiers - Preparation step 3Combine powdered almonds, flour and icing sugar in a bowl. Add the egg whites and mix well.
  • Almond financiers - Preparation step 4Add the hazelnut butter and the vanilla and mix well.
  • Almond financiers - Preparation step 5Pour the batter in a greased financier mould and bake for 15 min at 390F.
  • Almond financiers - Preparation step 6Bake the rest of the batter and there you are ! Ready for tea time :D
